We are shown at the last bidder with the highest amount at 4:11:48 at 526.99. The winning bidder was before our bid at 4:11:44 with a higher amount 536.99. It appears that the winning bidder new our amount prior posting their final bid and was able to somehow manipulate EBay into accepting their bid at an earlier time. How do we prevent this in the future?

Thank you for your question about this snipe. You did not win, simply, because your bid was not high enough.
Someone placed a high bid at some point during the auction. Your snipe is no different from any other bid, so the price re-calculated to become your bid value plus one minimum bid increment.
